Make your own ketchup

You will need:
Cans of diced tomatoes in juice totaling 6lbs
1 Large onion, diced.
2 Tablespoons chili flakes
1 cup Cider Vinegar
1 cup White Vinegar
2 cups sugar
a pinch of allspice
salt to taste
Xanathan gum

In a pot, saute your onions in a bit of oil until translucent, add the allspice chili flakes and cook for a minute on low heat then throw in the vinegars and tomatoes and sugar and cook for about an hour or until reduced by 1/3. Season with salt to taste adding more chili flake if you like it more spicy. Puree in a blender adding small amounts of xanathan gum until it reaches the desired viscosity.

why the fuck does everyone insist upon adding sugar to everything?  sugar is evil and has no place in a recipe unless it is a desert item.  if someone cant cook normal food without adding sugar to it they shouldnt be cooking

caveat:  sugar is a helluva lot better than any sweetener coming from a corn plant.  that shit should be de-invented

Actually, I kinda agree. Sweet crap should not be anything other than some sort of dessert item or drink.

they do it because sugar is something the human body naturally craves and even if the food tastes like shit, if theres sugar in it people will still like it

As much as I hate hate hate to say this but Easy is right. What the sugar does is cuts the acidity in the tomatoes. Just made some creole sauce from scratch and had to add sugar to it for this exact reason.

they add sugar/sweetener to the food to make is more addictive...it has nothing to do with culinary talent.  the more addictive the food...the more money they make.

Sweetness balances the acidity of the tomatoes. If you don't like sugar you can use raw unfiltered honey instead for even more flavor.

another example of excessive use of sugar...

i was just trying to buy sausage and every single one had a major ingredient of 'sugar' or 'high fructose corn syrup.'  wtf?  i had to go to the natural foods section and literally pay double the price of the regular garbage for sausage that didnt have sweeteners in it.

also there were several sausages that were made from 'mechanically separated <insert animal name here>'

They're acidic. Take a carbon steel knife and slice up some tomatoes. A patina will form fairly quickly.

They're acidic. Take a carbon steel knife and slice up some tomatoes. A patina will form fairly quickly.

for shits and giggles i just sliced a tomato from my garden, several times, with a cutco knife and a chicago cutlery knife.  nothing...just some juices everywhere. no discoloration
