I'm using one wheel's worth per record but some are two plates. It's working for the moment but I don't know how long it'll last. Engineering fags, tell me how to figure out how long these things will stick to my wall.

Measure the weight. Test how long it stays up. That should give you a rough answer. LOL

I guesstimated the relative humidity by the pictures I've seen to be ~75% with an upward trend. That means it could theoretically hold up to even 3 days or even longer. Yep.

Without knowing the adhesive and its properties the only way to get the answer is through experimentation. See how long it holds up. Repeat a few times. That'll give an average.
