My raspberry pis are my VPN servers and they connect to the proxies. I have the proxies off site, my IP is never seen just the IP of the proxies. Like I said really paranoid.

I still don't understand. If you have foreign proxies why bother with the pis at all? What do they add besides latency?

Dedicated VPNs, encryption and  the latency is not really noticeable for general internet usage. Also I have multiple computers and not all of them use the proxies do to usage I need the bandwidth on those.

Latency makes my dick get harder a lot slower.  I concur!

can't speak for anyone else, but I've been using a pi to manage connections - it has tor, i2p, openvpn etc. set up to connect outbound, but only accepts a single ssh-forwarded proxy, which automatically determines which connection to forward it through. it's not any more secure or anything, it's just simpler to manage on the client machine.
