The EU has open borders. I can just drive or walk into a neighboring EU country as I please.

If I go from the UK to anywhere, I need a passport.

What about Scotland? Can't you just drive there and vice versa?  I'm pretty sure you can enter Germany without passport controls, is that wrong?

Scotland is UK, so it is like you can drive from Florida to New York without a Passport

But Everytime I go To Amsterdam I need a passport and to Paris on the Channel Tunnel Train the same

I can and did cross the borders to both the Netherlands and France without a passport or a single fuck. Entering the UK would be different, I guess. Unless you swim...

You used to be able to go to Canada and Mexico without a passport. That's only a recent change (last ten years)

This is what it says if I want to go from UK to Republic Of Ireland :

If you are a UK Citizen, the Irish authorities do not require that you have a passport to enter the Republic of Ireland. However, you should have a piece of identification to to allow you to pass immigration checks etc. If flying, your airline will insist that you have formal identification.

From UK To France for example by Train Euro Tunnel there is this  which says I need a Passport.
