Most secure way to encrypt a memory stick?

Eyup.

I am intending to install a Mac operation system onto an encrypted memory stick so that I can boot the OS from the MS (memory stick) with the intention of using that OS and MS to run the programmes that deal with my encrypted emails PGP as well as my customers orders etc. This way I can keep my laptop totally clear of any connection to the business, mainly as extra security reassurance for my customers etc.

What would the most secure encryption method be to encrypt a memory stick?

I have a basic knowledge of such things but im definitely not a computer expert.

Any advice or thoughts would be great guys.

While I can't really talk about OSX due to never using it except when it runs on a customer's machine, I can give you a guide on how to do this using Linux:
For full disk encryption use this guide, you can choose from various algorithms but AES with two factor authentification seems to do the best job so far:
