I think go karts would be the ultimate vehicle for SHTF. They are light weight, manueverable and fuel efficent. I mean you could build one to run on ethanol.

Their are powered by a internal combustion engine which makes too much fucking noise. I would rather use my feet. That way I can sneak up behind you slit your throat, steal whatever I need and you wouldn't hear a damn  thing until you felt my knife pressing against your neck.

IF you know what you are doing, in a SHTF situation, there are NO rules. You can make a Go-Kart very silent...

Same with dirt bikes, Get or make a custom exhaust, You could probably also tweak the older air cooled ones to run off propane.

Or you could just buy a Rokon.

I guarantee I'd have some mad-max style Cadillac-Peterbuilt-Caterpillar 6 wheeled monolith within a month of the apocalypse.

You could make some pretty good vehicles for such a scenario, except getting fuel will always be a problem. There's always electric power but then you have to worry about a limited range and recharge times. So in reality most conventionally powered vehicles all have downsides.

If getting gas wasn't a problem however, I still wouldn't agree a go-kart as the wisest option. It's too low to the ground and offers no protection. You could maybe raise it, put big tires on it and build a cage/some sort of armour around it, then it might be pretty useful. I would want a fairly powerful engine, maybe 500+ cc's because you want to be able to run away; speed and agility is a big advantage but it's only so useful if it can only be used on roads.

I think I would prefer a bigger buggy, maybe with some armour and a good power to weight ratio. Using air cooled beetle parts might be the most practical solution here, since old VW stuff is pretty basic and still somewhat common. And it doesn't need an ecu, or coolant. It's possible to make them powerful and ideally, you could push 150-200 HP through a 2400 cc engine. With proper tires you could go almost anywhere at sufficient speed, and maybe with an extra large fuel tank, for a long time. Realistically though this might be a tough build without the resources to do it. But at least it would offer more protection than a bike or go kart...

front of a '66 Caddy Deville, cut right behind the back doors
twin-axle truck frame behind the back of the caddy with toolboxes facing out on both sides
keg fuel tanks inside frame with air tanks
MIG welder and oxy torch in bed-enduro bike in bed for scouting/smaller distance
some diesel I6 or I8, turbo, non computer controlled. manual trans
on bags of course
regular exhaust with cutouts.

I get all the room of the fullsize caddy with the convenience of a work truck. I also have the bike to zip around as needed. the older diesels can be made to run on heating oil/cooking oil/jet fuel/kerosene/whatever.

or just get an R6, black it out, put a regular muffler on it, and just zip around at night.

honestly though, go karts? why not an ATV or even a jeep...there are much better solutions much more available.
