Weird, I use documentaries to fall asleep as well. I think it's caz the pictures HELP but you can still enjoy them just listening to the narration.
Does it have to be youtube? This site http://documentaryheaven.com/watch-online/ has a good library. Most of the vids are from youtube anyway, but even if they aren't you can probably find them ON yt.

The channel "vsauce" has a lot of good videos. That's a channel I subscribe to for my late-night watchings. Not necessarily to fall asleep to, but at least to watch them in bed. His videos are usually 11-13 minutes long and cover topics that may seem common, but in a different way. Can be enlightening and profound.
A popular documentary is Loose Change: Second Edition. It's all about the 9/11 attacks and how the government must be covering it up.
