The funny thing is salsa is really pretty simple, but it has a lot of possibilities to change the flavor around. This is a very basic recipe that doesn't require much effort at all, but the end result is incredibly flavorful.

Note that I don't like the texture or taste of onion. Almost every salsa recipe I've encountered calls for onion. I don't like how raw onion turns bitter after it's been cut. If you cook the onion down a  lot it ends up adding a really weird taste to salsa. Honestly I have no use for onion so I avoid it altogether, but that does change the flavor of my cooking.

Also you might note that I did include the tomato skins in the salsa I made. They are basically red lines about half an inch long in the salsa. I don't mind leaving the skins in because if you boil them for 20 minutes they are super soft and you won't even notice them in the salsa. However a lot of people aren't used to seeing that so they might spaz about it if they're OCD. A local burrito place used to make a salsa with tomato, poblano, tomatillo, jalapeno, serrano and habanero. They left the tomato skin in the salsa. For pure chips and sauce enjoyment you might take the tomato skin out. For burritos, tacos or whatever else be lazy and leave the skins in.

I also wanted to note that the cost to make this is ridiculously low. I get 1 lb of roma tomatoes for about $1.19. 1lb of jalapeno ranges from $ .80 to $1. Garlic is pretty cheap for a single clove. Limes have been crazy around here, ranging from  $ .25 to $ .75 per lime. Cilantro is $.75 - $1 for a bunch. Per batch the total cost is under $4 because there's no way you want to use that much cilantro in one batch. I'd say a typical bunch of cilantro would make 3-4 batches. So you're looking at less than $3 per batch if you portion out the ingredients, which is awesome because each batch yields about 16 oz of fresh, amazing salsa that's infinitely better than anything you're going to find in the grocery store.

I've been fortunate enough to be able to get good salsa from restaurants because I live in central texas, but I'm fixing to move north, which is strictly gringo territory.

this looks like a great recipe, I may experiment with habeƱero peppers to give it some REAL kick, thanks for posting

Usually when I make my salsa I take tomatoes, peppers, cilantro, cucumbers, and a lil Parmesan. It works really nice and the cilantro gives it a nice smokey flavor.
