Post by: Rocklin on June 16, 2014, 12:14:34 am
Sorry i dont have pictures of this,  i made the stuff at my GF's house (SE asian).

we need 3 items for this project.

asian white long grain glutinous rice
yeast balls (1 ball to each cup of rice)
large jar to ferment in.

Step 1.
cook 4 cups of rice and after it's done cooking set it aside till its only warm.

Step 2.
while the rice cools take your yeast balls and grind to a powder form,   make sure to grind all chunks down to a powder.

Step 3.
Sprinkle the yeast powder over the cooked rice making sure to coat all 4 cups worth evenly.....mix and mash the rice up well.

Step 4.
Add the rice to the jar,   form a doughnut shape of the rice along the walls of the container with the hole reaching all the way to the bottom of the jar.

Step 5.
place a paper towel over the mouth of the jar and put the lid on over it,   this lets the gas escape but no contaminants in.

Step 6.
wait 3 weeks.....after that time take the jar and upend it into a strainer over a bowl,   mash the fermented rice to drain all the liquid out into the bowl.

Step 7.
using coffee filters or lab grade filters filter this liquid into a bottle.....flavoring can be added at this point.

drink within 2 weeks.

enjoy.
